What Does it Mean to be Gluten Free?

Well, lets begin by defining gluten. Gluten is a protein that is found in foods processed from wheat, barley and rye. Gluten is responsible for giving dough its elasticity, helping it rise, and giving it a chewy consistency.
It is this protein that can cause allergic reactions or unwanted side affects in some people. These reactions can range from an upset stomach to a serious condition called Celiac Disease. Celiac Disease is an autoimmune disease that causes the body to attack the villi of the small intestine in attempts to keep the body from absorbing these harmful nutrients.
So, Gluten Free means any food that does not contain the gluten protein. It can also refer to an overall diet that does not include gluten.
Having to eat Gluten Free can be tough, especially the transition period. As gluten intolerance has risen, so has the demand for gluten free alternatives. Now you can get almost everything you would normally eat, gluten free. It may take some work, you may find yourself cooking a lot more and it will take some extra money. Gluten Free items will be more expensive than their conventional counterparts. However, if you are suffering from what you think is a gluten intolerance, avoiding such foods will be worth every penny.
