Rice Crispy Treats are a popular favorite sweet snack. We’ve made an ooey gooey holiday spin on these special treats that will get everyone excited, especially Vegans and Vegetarians! Cold weather gets us in the mood for Hot Cocoa and Peppermint Sticks, and the two together create a magical winter nostalgia that can’t be beat.
For the “glue” we decided to go with the Dandie’s brand Peppermint Marshmallows and Earth Balance Vegan Butter because they are Non GMO, vegan and gluten free. The crispy portion of these treats are the Nature’s Path Koala Cocoa Crisps which are also Non GMO, vegan and gluten free. These Vegan Peppermint Cocoa Rice Crispy Treats make a great gift for family and friends. All you need is a decorative tin or box to put them in and some ribbon, and you have a tasty Christmas gift to share!
This recipe makes 24 servings. Each Serving is one 2 x 2 inch square.
4 Cups Dandie’s Peppermint Mini Marshmallows
1/4 Cup Earth Balance Vegan Butter
5 Cups Nature’s Path Koala Crisp Cereal
In a large sauce pan melt butter over low heat. Add marshmallows and stir until melted and well combined. Cook 2 minutes longer, stirring constantly. Remove from heat.
Add cereal. Stir until well coated.
Using buttered spatula or waxed paper, press mixture evenly and firmly in buttered 13 x 9 inch pan.
When cool, cut into 2 x 2 inch squares.
