Irish immigrants in America couldn’t afford to eat meat at every meal. Once in America, they learned of Brisket, a delicious cut of beef that was cheaper and could feed many. So on certain holidays, including St. Patrick’s Day, beef brisket was made by brining it with vinegar and “corns” of salt. The Corned Beef was born! The tradition of eating Corned Beef on St. Patrick’s Day is still observed through out the country today!
